Rustic Italian Tortellini Soup
Think HEARTY when making this. Perfect for cool weather eating as a main course. If you do, add a salad and light dessert. When I first made it, I was the “appetizer course” for one of my foodie groups. A huge hit where all said, “Another helping please … and this could be the main course.” Definitely.

ingredients
¾ pound Italian turkey sausage links, REMOVE casings
1 medium onion, chopped
6 garlic cloves, minced
2 cans (14½ ounces each) chicken broth OR create from Better than Bouillon® chicken flavor—usually my choice
1¾ C water
1 can (14½ ounces) diced tomatoes, undrained
1 package (9 ounces) refrigerated cheese tortellini
1 package (6 ounces) fresh baby spinach, coarsely chopped
2¼ tsp minced fresh basil or ¾ tsp dried basil
¼ tsp pepper
Dash crushed red pepper flakes
Shredded Parmesan cheese (optional)
