Fingerlings
I first did this for a Holiday dinner with my Foodie Friends. It was a hit, along with the Buttery Garlic Mushrooms. Fingerlings are eye appealing with the white and red potatoes usually in the mix from your grocery store. Their texture is almost creamy in your mouth.The great thing about fingerlings is that you can do prep work the day before—cut and store in a bag with water.
Leftovers? Think breakfast the next day with eggs on top.
Cooking time: 20 minutes
Serves 8
ingredients
2 pounds total in weight fingerlings, cut in half lengthwise … even the small ones
2 lemons, zest. You will zest into your mixture to coat
3 cloves of garlic, minced
½ – ¾ C Parmesan cheese
3 T butter
3 T olive oil
1 tsp salt
1 tsp black pepper
3-4 T parsley, as garnish
Preheat oven to 425°
putting it all together
When ready to do your baking, Mix all ingredients together in a large bowl. Add the fingerlings. Lay out on a cookie sheet. Drizzle with a little more olive oil if needed and into the oven until cooked.
