Judith’s Apple or Pear Pecan Salad with Honey Mustard Dressing
This is a HUGE hit salad! Super fast to put together—less than 10 minutes. Dressing takes about 5 minutes. A perfect beginning for a fall gathering and festive with its colors for the Holidays. Many times, my guests ask for more.
Serves 8
ingredients
2 pears, Red D ‘Anjou, sliced
2 apples, Fuji or Honey Crisp, sliced
1 red leaf lettuce head, torn
12 oz baby spinach
1 C pomegranate seeds
½ C dried cranberries
¾ C pumpkin seeds, roasted
optional
½ C slivered almonds, roasted
6 oz Feta or Gorgonzola cheese. I prefer a Hungarian or French Feta I find in Middle Eastern grocery stores … and love, love Gorgonzola. Pick one!
putting it all together
Place all of the ingredients in a large salad bowl. Drizzle with the desired amount of honey mustard dressing and gently toss.
Serve immediately!
Honey Mustard Dressing
ingredients
¼ C Dijon mustard
3 T honey or more to taste
3 T apple cider vinegar or more to taste
1 T fresh lemon juice (optional)
¼ to ½ tsp fine sea salt
¼ tsp fresh ground black pepper
¼ C extra virgin olive oil
putting it all together
Combine the mustard, honey, apple cider vinegar, lemon juice, ¼ teaspoon salt, and the black pepper and whisk until well blended and creamy.
Whisk in the oil, and then taste the dressing. I keep in a mason jar with lid and shake well.
If you want more tartness, adjust with additional salt, vinegar, or honey. If you want even more tart, add another tsp of vinegar. If you want less tartness, reduce vinegar.
