Judith’s Summer Beet Salad
My version—I discovered this at CheeseCake Factory and then did my own tweaking. One of my dinner deck guests took one bite, and then pulled the entire platter to him. “I’ll have this for my dinner!” Maybe I should call it Dan’s Beet Salad?
Serves 4
Prep: less than 10 minutes (love this)
ingredients
pickled beets, already sliced. I use ½ a jar
1 orange
2 avocado, sliced
yogurt with honey. I got at Kroger’s King Sooper. If you can’t find, get vanilla yogurt, add two tablespoons of honey.
Crispy onions ... add just before serving—great crunch. I use French’s Fried Onions.
putting it all together
Spread a generous portion of yogurt on bottom of serving platter. Add a generous layer of beets on top of yogurt. Top with cut up orange; then add sliced avocado. Just before serving, sprinkle crispy onions on top.
That’s it … easy, peasy and delicious! I put together all but the crispy onions about 30 minutes before serving and chill in refrigerator, ready for table.
